Making good food is one of my favorite way of showing love.
I have always been surrounded by fresh tasty food. I can say I am quite spoiled when we talk about food and for a long time I never tasted anything that wasn’t freshly made.
My food habits had changed a lot in the last few years, I have been willing to try different things and I fell in love with food more deeply.
Living abroad I learned to appreciate different tastes and different things but nothing makes me feel at home like a big plate of pasta – that’s the reason why I choose the following recipe to share with you.
Ingredients – for 2 people:
- 200g cuoricini pasta;
- 350g cherry tomatoes;
- 1 fresh Tuscan sausage;
- salt & pepper;
- Parmesan or sweet Pecorino – optional.
Heat a frying pan and fry the sausage cut into small pieces. While the sausage is cooking wash and cut the tomatoes into quarters.
When the sausage takes on a golden color it is time to take it out of the pan. Tuscan sausages’ fat is really tasty and salty that’s why I suggest to cook the tomatoes in it. Lower the heat and let the tomatoes cook slowly until you have the consistency of a thick sauce. Add the sausage to the tomato sauce and let it finish cooking for a few minutes. Taste and add salt and pepper if necessary.
In the meantime you can start to cook the pasta. The Cuoricini-pasta that I used is a type of fresh pasta which requires a lot of water and just 4 minutes to be perfectly cooked.
Wait for the water to boil – only then it is time for the pasta.
When the pasta is cooked drain it of water and mix it with tomato sauce and sausage.
Serve with grated Parmesan or Pecorino cheese if you like.
*For an even better taste remove the skin from the sausage before cooking it.
