One cannot think well, love well, sleep well, if one has not dined well.
Ingredients for two people:
200g saffron tagliolini;
150g guanciale – kind of bacon;
salt & pepper;
pecorino or Parmesan cheese – optional.
Cook the saffron tagliolini according to the instruction on the box.
Brown the guanciale in a pan on a low heat – since the guanciale is a fatty kind of meat I would suggest not to use any oil nor butter, but that goes by your personal gusto.
When the guanciale gets a nice golden color, it is time to take it off the pan.
Cut the zucchini into pieces – I prefer a thin round shape but it is perfectly fine with small cube. You can cook the zucchini either by boiling them in the pot for the pasta or in the same pan in which you cooked the guanciale – in this case I would suggest to add a table spoon of olive oil.
Drain the saffron tagliolini and add the sauce made with zucchini and guanciale. Season with pepper if you like.
Serve with pecorino or Parmesan cheese by gusto.
